Oysters are a totally awesome food. Did you know that because of the post-harvest people can actually eat raw Gulf oysters with reduced risk of Vibrio vulnificus illness. It is amazing that they have come up with a system that actually reduces the risk because so many people love raw oysters, but they have not wanted to take the risk of contracting the Vibrio Vulnificus illness. The process can either involve freezing or low heat pasteurization or heat cool pasteurization as well. There are a lot of different processes that can help make oysters a more safe food to consume.
